Cheese Pimiento Spread

I grew up eating sandwiches with cheese pimiento spread. When I was a teenager, my auntie Judith taught me how to make it homemade. I used to make it with Anchor butter and quick-melt cheese, but when I moved to HI last 2006, I have to tweak the recipe a little bit using salted butter and Velveeta cheese instead. Here's the recipe:

Ingredients:

2-3 sticks of salted butter
1 lb of Velveeta cheese, cut into cubes
1/2 cup of sugar
1 small can of pimientos
5-7 large egg yolks

Process:

1. Melt the butter and cheese in a sauce pot
2. Add sugar and pimientos
3. Turn of heat, cool for a bit and add the egg yolks one at the time
Note: Slowly stir in egg yolks

I hope you like it! Enjoy!
