One of my ever favorite Filipino dishes is sinigang. Here's my own recipe. I hope you'll like it!
Ingredients:
- 3 lbs pork ribs, cut into 2 inch cubes
- 1 medium onion, chopped
- 1 pork bouillon cube
- 1 packet sinigang tamarind soup mix
- 1 stalk onchoy leaves
- 1 stalk string beans
- 7-8 pcs. okra
- 3 pcs. gabi bulbs, quartered
- 2 pcs. jalapeno/sweet yellow peppers
- 2 small tomatoes, quartered
- 3 tbsp. fish sauce/salt
- 1 tsp. black pepper
- 1 tsp. sugar
- 4-5 cups water
Steps:
- Boil water with onion, tomatoes, pork, fish sauce, pepper and bouillon cube until the pork is fork tender
- Add gabi. Boil until gabi is fork tender.
- Add string beans, okra and jalapenos. Boil for 2 minutes.
- Add tamarind mix and sugar. Boil for a minute.
- Turn off heat and add the onchoy leaves. Cover for 5 minutes and serve.
*You may need to adjust the fish sauce and water ratio depending on your taste.
