Pork spare ribs sinigang



One of my ever favorite Filipino dishes is sinigang. Here's my own recipe. I hope you'll like it!


Ingredients:

  • 3 lbs pork ribs, cut into 2 inch cubes
  • 1 medium onion, chopped
  • 1 pork bouillon cube
  • 1 packet sinigang tamarind soup mix
  • 1 stalk onchoy leaves
  • 1 stalk string beans
  • 7-8 pcs. okra
  • 3 pcs. gabi bulbs, quartered
  • 2 pcs. jalapeno/sweet yellow peppers
  • 2 small tomatoes, quartered 
  • 3 tbsp. fish sauce/salt
  • 1 tsp. black pepper
  • 1 tsp. sugar
  • 4-5 cups water

Steps:

  • Boil water with onion, tomatoes, pork, fish sauce, pepper and bouillon cube until the pork is fork tender
  • Add gabi. Boil until gabi is fork tender.
  • Add string beans, okra and jalapenos. Boil for 2 minutes.
  • Add tamarind mix and sugar. Boil for a minute.
  • Turn off heat and add the onchoy leaves. Cover for 5 minutes and serve.
*You may need to adjust the fish sauce and water ratio depending on your taste.
